Viscoelastic behaviour of gel-like gelatin/locust bean gum two-phase systems

Abstract
The rheological behaviour of gelatin/locust bean gum (LBG) two-phase systems, at 18°C, has been studied and compared with the behaviour of the two biopolymers alone. The results suggest that the macrostructure and mechanical properties of the mixed system can be predicted on the basis of the knowledge of its phase diagram, obtained at 18°C, at definite conditions. On the LBG enriched continuous phase region, the mixed systems are governed by the concentration of LBG in the process of phase separation and the Cross model (including a term of yield stress) described well the shear rate-apparent viscosity data. On gelatin enriched continuous phase region, the dynamic behaviour seems to be determined by the effect of two factors, acting in an opposite way: the increase of the local concentration of gelatin and the decrease in the effective number of junction zones of the gel network due to the increase of the volume fraction of the disperse phase.
