Non-newtonian modeling of polarization phenomena during fruit juice concentration by membranes

Abstract
A theoretical study of transport phenomena in membrane processes is presented. The proposed solution is based on the application of boundary layer theory coupled with the well-known osmotic pressure model. Aim of the study is the individuation of the operating conditions that, in laminar regime, limits concentration polarization phenomena occurring during macromolecular solutions concentration by means of membranes. Concentration polarization can be considered a membrane reversible fouling because its effects can be reduced decreasing the trans-membrane pressure (driving force) or feeding to the system a less concentrated solution. The attention has been focused on orange juice solutions; these may be considered, in a wide shear rate range, non-newtonian fluids modeled by a power-low equation. The dependence of apparent viscosity and, therefore, of diffusion coefficient upon concentration has been taken into account, too.
